Finding tasty meals that takes minimal time to prepare is hard, especially with lengthy to-do lists and chores that seem to pile up out of nowhere. Here are some quick recipes to help lighten the workload.

Mixed Greens Salad
PREP TIME: 10 minutes
TOTAL TIME: 15-20 minutes
Serves: Eight 1 cup portions

1/3 Cup of Pecan halves
(can be substituted for any
other type of nut)

1/2 Teaspoon of cinnamon

1 (5oz) package of
mixed salad greens

1 large pear, thinly sliced

1 large apple, thinly sliced

1/2 Cup dried cranberries
or yellow raisins

1/2 Cup of your favorite
cheese, shredded
(mozzarella, asiago or white
cheddar would go great
with fruit)

Oil & Red Vinegar to taste

Salt & Pepper to taste

Once all ingredients are prepared, toss them together in a large bowl, season appropriately and you are done. How easy was that? Substituting tomatoes for the pear, cucumber for the raisins/cranberries and red onions for the apple, transforms this fresh lunch time salad into a delicious side salad for dinner.

Cheesy Chicken Pot Pie
PREP TIME: 10 minutes
TOTAL TIME: 35-40minutes
Serves: Eight portions

3 Cups chopped chicken,
cooked (Boiled, sautéed, or
roasted, whatever suits your
fancy.)

1 (16oz) package frozen
vegetable blend

8 ounces white cheddar, cut
into ½” cubes

1 (10 3/4 oz) can reduced-
sodium condensed cream of
chicken soup

1 (8 oz) can refrigerated
crescent dinner rolls

Preheat the oven to 375 degrees. Combine the chicken, vegetables, cheese and soup in a 13X9” casserole dish. Unroll the crescent roll dough and place evenly over the chicken mixture. Bake for 20-25 minutes or until the roll top is crispy and golden brown. Serve warm and listen to the silence of happy people eating.

Chili Soup
PREP TIME: 5 minutes
TOTAL TIME: 30 minutes
Serves: Four 1 ¾ Cup portions

1 (28oz) can diced tomatoes,
undrained

1 (15oz) can kidney beans,
rinsed

1 (14 ½ oz) can chicken broth

2 stalks of celery, chopped

2 carrots, chopped

1 white onion, chopped

2 teaspoons chili powder

1/3 Cup finely shredded
Four Cheese Mexican Blend

Bring all ingredients minus the cheese to a boil in a medium saucepan. Simmer on low heat for 20-25 minutes or until the vegetables are tender. Stir cheese and ladle into bowls. Garnish with cheese and serve. Ladle over nachos or Fritos for a fun variation.
